Beeswax, preserved lemon, dried wildflower, fresh pear, clover honey and creamy/briny nose. The taste is equal parts texture and flavor. Get chamomile, lemongrass, white pepper and more of those darn pears and dried aromatic flowers. Waxy/creamy texture, low acidity, very little oak influence (aged in both clay Amphora and neutral oak) and 30 second finish that moves into the savory, non-fruity realm. This is a fantastic representation of Bordeaux-style Semillon from California. And such a rare find!
Perliss Estate Vineyards is based out of Calistoga in the northern reaches of Napa Valley. Their vineyard is planted to Cabernet Sauvignon. The Semillon comes from Sonoma’s Knights Valley, immediately north of Calistoga. Aaron Pott makes their wines. I highly recommend you find and buy this Semillon before it vanishes.Â
