“Pét-Nat” is short for Pétillant-Naturel, a category of sparkling wine that is single fermentation finished in its enclosed bottle (as opposed to the Champagne process, where bubbles are made in its 2nd fermentation). This is made from 85% Pinot Gris, 15% Chardonnay. I dig this wine for its ripe apple, exotic citrus and slight tropical flavors. It is simple, straight-forward, off-dry and undeniably delicious.
SIN-EATER, is the name for the Sparkling Wines by Yamakiri Winery in Mendocino’s Yorkville Highlands. I’ve only tried their white wines as of this writing, and loved them all for their perfume, fresh flavors and lightness.
