CHIRON Cabernet Sauvignon “Candor” 2015

100% Cabernet Sauvigon from “Bear Flag Vineyard” north of Calistoga at the base of the Mayacamas mountains. Bordeaux-ish nose of dry aged beef and dried shiitake mushrooms sprinkled over ripe blueberries and Bing cherries. Taste is fresh dark red berries and cherries, slightly liqueur-ish, and a mineral/crushed rock earthy edge. Very firm tannins that cut off the flavors on the finish right now.
